mediterranean chicken bowls
Everyone loves a fresh, healthy bowl for dinner! And this one is just as easy as it is delicious! I found it on pinterest and followed the recipe to a t - here is the original source. I think next time I will opt for making a dairy free tzatziki and maybe a bit of homemade hummus but overall we were really please with how it turned out. We’ll definitely be making it again!
Ingredients (serves two | prep + cook time ~ 35 minutes)
Chicken + Marinade
2 chicken breasts
juice of 1 lemon
1 tablespoon good red wine vinegar
1 teaspoon local honey
1 teaspoon oregano
1/2 teaspoon cayenne pepper
Pinch of salt & pepper
Tzatziki
2 small persian cucumbers, grated
1 1/2 cups full-fat greek yogurt
2 large garlic cloves, finely minced
2 tablespoons extra virgin olive oil
1 tablespoon white vinegar
1/2 teaspoon salt
1 tablespoon chopped dill
Avocado Feta Salad
1 large diced avocado
1/4 cup fresh feta
1 1/2 tablespoons chopped dill
juice of 1/2 a lemon
1 tablespoon (or more) of good olive oil
salt to taste
Remainder of Bowl
1 1/2 cups cooked quinoa (about 3/4 cup uncooked)
1/4 cup pickled red onions
dill to garnish
Instructions
add your chicken breasts to a large bowl with the marinade ingredients making sure the chicken is evenly coated. let marinate while you prepare the rest of your ingredients.
make your avocado salad by mixing together your avocado with crumbled feta, lemon, olive oil, dill, and a pinch of salt.
to make the tzatziki, grate your cucumbers and add to a fine mesh sieve. press down on the cucumbers and try to remove as much liquid as possible. In a medium bowl, mix together greek yogurt, garlic, olive oil, vinegar, and salt until completely smooth. then mix in the drained, grate cucumber and dill.
to make the chicken, heat up your grill pan (we used our stab) on medium-high and coat with a little bit of oil. Add the chicken and cook for 5-6 minutes on each side. once cooked, remove the chicken and cut into cubes.
add the cooked quinoa to a bowl along with the chicken, avocado salad, pickled onions, and a big dollop of tzatziki.
