I made my first olive oil cake for Easter yesterday and it was absolutely delicious. Also, surprisingly very easy! The cake turns out perfectly moist and not overly sweet. Such a great dessert to bring for spring/summer parties, bbqs, and the like!
Cake Ingredients
4 eggs
1 cup sugar
zest of 2 oranges
1/4 cup fresh squeezed orange juice
1 3/4 cup flour
1 1/2 teaspoon baking powder
3/4 cup good olive oil
7 tablespoons salted butter (melted)
3 tablespoons milk
optional: rosemary sprig or dried orange slice
Cake Instructions
preheat oven to 350 degrees fahrenheit.
prepare a round cake pan by slathering it in butter, dusting it with flour, and placing a circular sheet of parchment paper at the bottom.
in a medium sized bowl, sift together the flour and baking powder.
in another medium sized bowl, whisk together the orange juice, olive oil, melter butter, and milk.
in the bowl of a stand mixed, add the eggs, sugar, and orange zest. beat on medium speed with the paddle attachment until light yellow and creamy (about 3-5 minutes).
turn the mixer speed to low and begin to alternate adding the olive oil and flour mixtures (one scoop at a time) until completely incorporated.
pour the batter into the prepared baking pan and bake for 30-35 minutes.
let cool completely before removing from baking pan.
while the cake is cooling, prepare the glaze.
once glaze is completed, place a wire cooling rack on top of a baking sheet with sides. place the cake on the cooling rack and pour the glaze on top until fully coated (you may need to use a rubber spatula or icing knife to gently spread).
place a spring of rosemary or dried orange slice (or any type of garnish) on top.
let the cake rest on the cooling rack for a bit while the glaze hardens.
finally, transfer to your preferred serving plate with the assistance of one or two large spatulas. when i did this, i found the cake to be sturdier than expected, so don’t be too worried about this step.

Glaze Ingredients
1 to 1 1/2 cups powdered sugar
zest of 1 orange
1/2 teaspoon vanilla extract or 1 tablespoon vanilla paste
2 tablespoons salted butter (melted)
Glaze Instructions
whisk all ingredients together in a bowl until smooth.
taste and add more ingredients as necessary. if you’d like a thicker glaze (this is what I prefer), opt for adding more powdered sugar). to make the glaze thinner, add more orange juice or water.
